- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Sauté diced onions in a skillet over medium heat for about 5 minutes until soft and translucent.
- In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, black pepper, and half of the grated Parmesan cheese. Mix gently until just combined.
- Transfer the mixture into the greased baking dish and shape it into a loaf.
- Sprinkle the remaining grated Parmesan cheese over the top, and optionally add paprika or Italian seasoning.
- Bake for 45-50 minutes, until the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for 10 minutes before slicing.
