Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Sauté diced onions in a skillet over medium heat for about 5 minutes until soft and translucent.
  3. In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, black pepper, and half of the grated Parmesan cheese. Mix gently until just combined.
  4. Transfer the mixture into the greased baking dish and shape it into a loaf.
  5. Sprinkle the remaining grated Parmesan cheese over the top, and optionally add paprika or Italian seasoning.
  6. Bake for 45-50 minutes, until the internal temperature reaches 165°F (74°C).
  7. Let the meatloaf rest for 10 minutes before slicing.
