  1. Start by patting the sirloin or ribeye steak cubes dry using paper towels, which ensures a better sear. Generously season the steak bites with salt and pepper.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Once the oil is shimmering, carefully add the seasoned steak cubes in batches to avoid overcrowding. Sear them for about 2-3 minutes on each side.
  3. Reduce the skillet heat to medium and add 3 tablespoons of unsalted butter. Once melted, stir in the minced garlic and sauté for approximately 30 seconds. Return the seared steak bites to the skillet and toss to coat them in the garlic butter.
  4. In a separate saucepan, melt an additional tablespoon of butter over medium heat. Add another minced garlic clove and sauté for about 30 seconds. Pour in 1 cup of heavy cream, and bring the mixture to a simmer. Add ½ cup of freshly grated Parmesan cheese, whisking until the sauce is smooth and creamy.
