Ingredients
  

For the Chicken
  • 2 pieces Chicken Breasts skinless and boneless
  • 1 tablespoon Cornstarch
For the Marinade
  • 1/4 cup Soy Sauce consider low-sodium
  • 2 tablespoons Rice Vinegar apple cider vinegar can substitute
  • 1 tablespoon Sesame Oil can substitute with neutral oil
For the Aromatics
  • 3 cloves Garlic freshly minced
  • 1 inch Ginger fresh, grated
  • 4 pieces Scallions green tops separated from whites
For Cooking
  • 2 tablespoons Vegetable Oil high smoke point oil
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Instructions
  1. In a large mixing bowl, whisk together soy sauce, rice vinegar, sesame oil, and cornstarch until combined. Add the chicken breasts and coat well. Cover and marinate for at least 15 minutes.
  2. While marinating, chop scallion tops and mince garlic and ginger.
  3. Heat the vegetable oil in a skillet over medium-high heat until shimmering.
  4. Add the marinated chicken; cook for 5-7 minutes per side until golden brown and cooked through.
  5. Reduce heat; add minced garlic, ginger, and scallion whites to the skillet. Sauté for 2-3 minutes.
  6. Pour in the remaining marinade, simmer for 2-3 minutes until it thickens slightly.
  7. Remove from heat, let rest, slice, and serve over rice or noodles drizzled with remaining sauce.
