  • 2 tablespoons Butter add more for extra richness
For the Finish
  • 1 cup Frozen peas optional but recommended

Step-by-Step Instructions for Chicken Vesuvio
  1. Generously season the chicken with salt and pepper on all sides. Preheat a large skillet over medium heat.
  2. Add olive oil to the hot skillet and cook the chicken skin-side down for 5-7 minutes until golden brown. Flip and cook for another 5-7 minutes.
  3. Remove the chicken and sauté the chopped onion and garlic in the same skillet for 2-3 minutes until translucent.
  4. Deglaze the skillet with dry white wine, scraping up browned bits, and let it simmer for about 2 minutes.
  5. Stir in the chicken stock, parsley, Italian seasoning, and butter, then allow to simmer gently.
  6. Reintroduce the chicken and arrange potato wedges in the sauce. Cover and simmer on low for 30-40 minutes.
  7. Check the chicken's internal temperature (should be 165°F). Add frozen peas, stir, and cook for another 5 minutes.
