For the Rice Bowl
  • 1 pound Chicken Breast Can substitute with tofu or chickpeas
  • 2 cups Sweet Potatoes Cut into bite-sized pieces
  • 2 tablespoons Olive Oil For roasting and cooking
  • 1 teaspoon Paprika Can be swapped for smoked paprika
  • to taste Salt
  • to taste Pepper
  • 1 cup Brown Rice Gluten-free if needed
For the Tahini Sauce
  • 1/4 cup Tahini Can substitute with almond butter or yogurt
  • 2 tablespoons Lemon Juice Fresh is best
  • to taste tablespoons Water For adjusting consistency

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Dice the sweet potatoes and toss them with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
  3. Heat a tablespoon of olive oil in a skillet and cook the seasoned chicken breast for 6-8 minutes until browned and cooked through.
  4. In a small bowl, whisk together tahini, lemon juice, and enough water to achieve a smooth consistency.
  5. Assemble the bowl with cooked brown rice, roasted sweet potatoes, chicken, and drizzle with tahini sauce.
