Step‑by‑Step Instructions for Cashew Chicken
  1. In a medium bowl, whisk together chicken stock, soy sauce, honey, hoisin sauce, rice wine vinegar, and cornstarch until smooth and set aside.
  2. Cut your chicken into bite-sized pieces and toss with cornstarch until evenly coated.
  3. Heat oil in a frying pan to 350°F and fry the chicken for about 2-3 minutes on each side until golden brown.
  4. In the same pan, add 1 tablespoon of oil, stir-fry garlic, ginger, and unsalted cashews for about 1 minute.
  5. Pour the sauce mixture into the pan and simmer for 2-3 minutes until thickened.
  6. Return the fried chicken to the pan, tossing in the sauce to coat.
  7. Remove from heat, sprinkle in sliced green onions, and serve.
