Ingredients

For the Chicken
  • 1 pound Chicken Thighs Substitute with chicken breasts if preferred.
For the Sauce
  • 1/2 cup Bourbon For a non-alcoholic option, use apple cider or chicken broth mixed with vanilla extract.
  • 1/4 cup Soy Sauce Use low-sodium or tamari for a gluten-free version.
  • 1/4 cup Brown Sugar Can be swapped for honey or maple syrup.
  • 3 cloves Garlic Minced for the best flavor.
  • 1 tablespoon Ginger Use fresh for bright flavor or ground for convenience.
For the Vegetables
  • 1 cup Bell Peppers Any variety works; substitute with zucchini or snap peas if desired.
  • 2 tablespoons Vegetable Oil Choose oil with a high smoke point.
For Garnishing
  • 2 tablespoons Green Onions Chopped for garnish.
  • 1 tablespoon Sesame Seeds Optional; can be roasted for extra flavor.

Equipment

  • Blackstone griddle

Method

Step-by-Step Instructions
  1. In a medium bowl, combine soy sauce, bourbon, brown sugar, minced garlic, and fresh ginger. Whisk until the sugar is fully dissolved.
  2. Place the chicken thighs into the marinade, ensuring each piece is evenly coated, cover and let marinate in the refrigerator for at least 30 minutes.
  3. Preheat the Blackstone griddle on medium-high heat with vegetable oil. Sauté sliced bell peppers and chopped green onions for 3-4 minutes.
  4. Push sautéed vegetables to the edges, add marinated chicken thighs, and cook for 6-8 minutes until golden brown.
  5. Stir sautéed vegetables back into the center with the chicken, cook for an additional 2 minutes.
  6. Transfer to a serving dish and garnish with sesame seeds and green onions. Serve warm over rice or with veggies.
