- In a medium bowl, combine soy sauce, bourbon, brown sugar, minced garlic, and fresh ginger. Whisk until the sugar is fully dissolved.
- Place the chicken thighs into the marinade, ensuring each piece is evenly coated, cover and let marinate in the refrigerator for at least 30 minutes.
- Preheat the Blackstone griddle on medium-high heat with vegetable oil. Sauté sliced bell peppers and chopped green onions for 3-4 minutes.
- Push sautéed vegetables to the edges, add marinated chicken thighs, and cook for 6-8 minutes until golden brown.
- Stir sautéed vegetables back into the center with the chicken, cook for an additional 2 minutes.
- Transfer to a serving dish and garnish with sesame seeds and green onions. Serve warm over rice or with veggies.
