  • 2 cloves Garlic Minced.
  • 1 teaspoon Dried Oregano Adjust according to taste.
  • 1 teaspoon Smoked Paprika Regular paprika can be used as a substitute.
  • 1 teaspoon Ground Cumin Adjust according to taste.

For the Tzatziki
  • 1 cup Greek Yogurt Substitute with low-fat yogurt if desired.
  • 1 medium Cucumber Grated and excess water removed.
  • 2 tablespoons Lemon Juice Fresh juice is ideal.
  • 2 tablespoons Fresh Dill Chopped.
For the Bowl
  • 2 cups Cooked Rice or Quinoa Quinoa is gluten-free.
  • 1 cup Cherry Tomatoes Halved.
  • 1 medium Red Onion Sliced.
  • 1/2 cup Kalamata Olives Pitted.
  • 1/2 cup Crumbled Feta Cheese Can substitute goat cheese.
  • to taste Fresh Parsley or Dill For garnish.

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill. Season with salt and pepper. Stir until smooth and chill.
  2. Preheat oven to 400°F (200°C). Spread halved cherry tomatoes on a baking sheet, drizzle with olive oil and salt. Roast for 15-20 minutes until blistered.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Sauté diced onion for 3-4 minutes until translucent. Add minced garlic and stir for another minute.
  4. Increase heat to medium-high, add ground beef. Break apart while cooking. Stir in oregano, smoked paprika, cumin, salt, and pepper. Cook for 8-10 minutes until browned.
  5. Serve cooked rice or quinoa as base in bowls. Top with seasoned ground beef, roasted cherry tomatoes, slices of red onion, kalamata olives, and feta cheese.
  6. Drizzle tzatziki over the top. Garnish with parsley or dill and serve with lemon wedges on the side.
