- In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill. Season with salt and pepper. Stir until smooth and chill.
- Preheat oven to 400°F (200°C). Spread halved cherry tomatoes on a baking sheet, drizzle with olive oil and salt. Roast for 15-20 minutes until blistered.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Sauté diced onion for 3-4 minutes until translucent. Add minced garlic and stir for another minute.
- Increase heat to medium-high, add ground beef. Break apart while cooking. Stir in oregano, smoked paprika, cumin, salt, and pepper. Cook for 8-10 minutes until browned.
- Serve cooked rice or quinoa as base in bowls. Top with seasoned ground beef, roasted cherry tomatoes, slices of red onion, kalamata olives, and feta cheese.
- Drizzle tzatziki over the top. Garnish with parsley or dill and serve with lemon wedges on the side.
