Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet, heat olive oil over medium heat and sauté diced onion and bell peppers for 5 to 7 minutes until softened.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add chicken thighs to skillet, cooking for about 4 to 5 minutes on each side until golden brown, seasoning with oregano, salt, and pepper.
  5. Stir in diced tomatoes and crumbled feta cheese, simmering for 2 to 3 minutes to meld flavors.
  6. Transfer the mixture to a greased 9x13-inch baking dish and spread evenly.
  7. Bake uncovered for 35 minutes until bubbling and chicken reaches at least 165°F (74°C).
  8. Remove from oven, let rest for 5 minutes, and garnish with fresh parsley before serving.
