  • 1/4 cup fresh lime juice Adds acidity and brightness
  • 1/4 cup fresh orange juice Sweetens the marinade
  • 1/4 cup pineapple juice Contributes sweetness and tenderizes
  • 2 tablespoons olive oil Helps flavor absorption
  • 2 tablespoons honey Balances acidity with sweetness
  • 3 cloves garlic (minced) Provides aromatic flavor
  • 1 tablespoon fresh ginger (grated) Adds a spicy kick
  • 1 teaspoon salt Essential for flavor enhancement
  • 1/2 teaspoon black pepper Adds depth to the seasoning
  • 1/4 teaspoon red pepper flakes (optional) Introduces heat
  • 2 tablespoons fresh cilantro Perfect as a garnish

Equipment

  • grill
  • medium bowl
  • whisk
  • resealable bag

Method

Step-by-Step Instructions
  1. In a medium bowl, whisk together lime juice, orange juice, pineapple juice, olive oil, honey, minced garlic, grated ginger, salt, black pepper, and optional red pepper flakes until well combined. Allow to sit for 5 minutes.
  2. Place the chicken in a resealable bag or shallow dish. Pour the marinade over, ensuring even coating. Seal the bag or cover the dish and refrigerate for at least 1 hour or ideally overnight.
  3. Preheat the grill to medium-high heat (375°F to 400°F). Ensure grill grates are clean and oiled for preventing sticking.
  4. Remove chicken from the marinade, letting excess drip off. Discard leftover marinade.
  5. Grill the chicken for 6-7 minutes on one side until grill marks appear. Flip and cook for another 6-7 minutes until internal temperature reaches 165°F (75°C).
  6. Remove from grill and allow to rest for 5 minutes before slicing. Garnish with fresh cilantro before serving.
