- In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, parsley, cumin, coriander, salt, and black pepper. Use your hands or a wooden spoon to mix thoroughly. Allow the mixture to rest for about 15 minutes.
- Wet your hands slightly to prevent sticking and shape the mixture into small oval koftas, roughly the size of a golf ball. Place the formed koftas on a clean plate or tray.
- Preheat your grill to medium-high heat, around 400°F (200°C). Brush the grates with olive oil to prevent sticking.
- Carefully place the shaped koftas on the grill. Cook for 10 to 12 minutes, turning occasionally until firm and golden-brown.
