Ingredients
  

For the Kofta
  • 1 lb Ground Chicken Fresh or lean ground turkey can be substituted.
  • 1 medium Onion, finely chopped Red onion can be used for a sharper flavor.
  • 3 cloves Garlic, minced Garlic powder can be a quick substitute.
  • 1/4 cup Fresh Parsley, finely chopped Cilantro works well as an alternative.
  • 1 tsp Ground Cumin Substitute with ground coriander for a milder touch.
  • 1 tsp Ground Coriander Ground cumin can also be an excellent alternative.
  • 1 tsp Salt Adjust to taste based on dietary needs.
  • 1/2 tsp Black Pepper Feel free to increase if you prefer a spicier kick.
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt Greek yogurt will give a thicker consistency.
  • 2 tbsp Lemon Juice, freshly squeezed Lime juice is a delightful alternative.
  • 2 tbsp Olive Oil Avocado oil works as a substitute.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, parsley, cumin, coriander, salt, and black pepper. Use your hands or a wooden spoon to mix thoroughly. Allow the mixture to rest for about 15 minutes.
  2. Wet your hands slightly to prevent sticking and shape the mixture into small oval koftas, roughly the size of a golf ball. Place the formed koftas on a clean plate or tray.
  3. Preheat your grill to medium-high heat, around 400°F (200°C). Brush the grates with olive oil to prevent sticking.
  4. Carefully place the shaped koftas on the grill. Cook for 10 to 12 minutes, turning occasionally until firm and golden-brown.
  5. While the koftas are grilling, whisk together the plain yogurt, freshly squeezed lemon juice, and a pinch of salt until smooth and creamy.
  6. Once the koftas are grilled to perfection, serve them hot alongside the garlic yogurt sauce for dipping.
