Preparation Steps
  1. Preheat your oven to 400°F (200°C). Spread the frozen hash browns on a baking sheet and bake for 20 minutes, flipping halfway through.
  2. While the hash browns are baking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the bacon slices and cook until crispy.
  3. In the same skillet, add 2 tablespoons of butter and crack in the eggs, cooking to your preference.
  4. Set up a double boiler for the hollandaise sauce. Whisk together egg yolks, Dijon mustard, and white wine vinegar until thickened, then gradually stir in melted unsalted butter.
  5. To assemble, layer the crispy hash browns on plates, then top with cooked eggs, crumbled bacon, and shredded cheeses, finishing with hot gravy and hollandaise.
