Step‑by‑Step Instructions
  1. In a medium bowl, crack the large eggs and add a pinch of salt, pepper, and a splash of milk. Whisk vigorously until smooth.
  2. Heat 1 tablespoon of butter in a non-stick skillet over medium heat until melted. Pour in the egg mixture and gently stir, cooking for 3-4 minutes.
  3. In a separate skillet, cook the breakfast sausage links over medium heat for 8-10 minutes until browned and cooked through.
  4. Spray a clean skillet with cooking spray and warm it over medium heat for about 1 minute.
  5. Lay one tortilla flat and add a scoop of scrambled eggs, a sausage link, and a sprinkle of shredded cheese.
  6. Fold in the sides of the tortilla and tightly roll it up from the bottom.
  7. Place the roll-up seam-side down in the skillet and cook for 2-3 minutes until golden brown, then flip and cook the other side.
