  • 4 cups Rocket (Arugula) Fresh
  • 2 medium Pears Juicy varieties like beurre bosc
  • 1 cup Parmesan (Fresh, Shaved) Thinly shaved
  • 1/4 cup Pine Nuts Toasted
For the Dressing
  • 1 tbsp Wholegrain Mustard
  • 2 tbsp Fresh Lemon Juice Freshly squeezed
  • 3 tbsp Olive Oil Extra virgin
  • 1/2 tsp Fine Salt Adjust according to taste

Preparation Steps
  1. Toast the Pine Nuts: Heat a small fry pan over medium heat. Add pine nuts and toast for 3-5 minutes until golden brown and fragrant. Transfer to a plate to cool.
  2. Prepare the Dressing: In a medium bowl, whisk together wholegrain mustard, lemon juice, olive oil, and fine salt until smooth.
  3. Slice the Pears: Core and thinly slice the pears into 1/4-inch pieces and place them in the bowl with the dressing.
  4. Combine the Salad Ingredients: In a large mixing bowl, add rocket, shaved parmesan, toasted pine nuts, and dressed pear slices. Gently toss to combine.
  5. Serve Immediately: Arrange salad on plates or a large dish and serve fresh.
