Method
 

Step‑by‑Step Instructions
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, then slice them into uniform ½-inch thick rounds.
  3. In a mixing bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
  4. Spread the seasoned sweet potato rounds on the baking sheet in a single layer.
  5. Roast in the preheated oven for 25–30 minutes, turning halfway through.
  6. Remove from the oven and let the rounds cool slightly.
  7. Transfer to a serving platter and sprinkle with crumbled feta cheese.
  8. Drizzle with honey and garnish with chopped parsley.
  9. Serve warm or at room temperature.
