Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together 1½ cups of all-purpose flour and ½ cup of powdered sugar. Cut in ¾ cup of cubed butter until mixture resembles coarse crumbs. Press into a greased 9x13-inch baking dish and bake for 15 minutes.
  3. Toss 2 cups of chopped rhubarb with 1 cup of sugar in a bowl. In a separate bowl, beat 2 eggs and mix with ¼ cup of flour and ½ teaspoon of vanilla. Combine with rhubarb mixture.
  4. Spread the rhubarb filling over the baked crust and bake for an additional 30–35 minutes until filling is set.
  5. Cool completely on a wire rack, then refrigerate for at least one hour before slicing.
