Step-by-Step Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together 1½ cups of all-purpose flour and ½ cup of powdered sugar. Cut in ¾ cup of cubed butter until mixture resembles coarse crumbs. Press into a greased 9x13-inch baking dish and bake for 15 minutes.
- Toss 2 cups of chopped rhubarb with 1 cup of sugar in a bowl. In a separate bowl, beat 2 eggs and mix with ¼ cup of flour and ½ teaspoon of vanilla. Combine with rhubarb mixture.
- Spread the rhubarb filling over the baked crust and bake for an additional 30–35 minutes until filling is set.
- Cool completely on a wire rack, then refrigerate for at least one hour before slicing.
