- In a small saucepan, bring 4 cups of filtered water to a boil over medium heat.
- Remove the saucepan from heat and add 1/4 cup of culinary lavender, letting it steep for 10 minutes.
- Juice 2 large lemons until you have a bright and tangy lemon juice.
- In a mixing bowl, combine the strained lavender water, freshly squeezed lemon juice, and 1/3 cup of sugar.
- Carefully pour the mixture into popsicle molds, leaving a small gap at the top.
- Let the filled molds sit at room temperature for about 2-3 hours, then freeze for at least 4 hours.
- To release popsicles, dip the molds in warm water for about 10 seconds.
