Step‑by‑Step Instructions
  1. Begin by bringing 2 cups of water to a boil in a kettle or saucepan. Once boiling, remove from heat and add 2-3 chamomile tea bags (or 2-3 tablespoons of loose chamomile). Allow to steep for about 5 minutes, then strain. Set aside to cool.
  2. In a large mixing jug or bowl, combine the cooled chamomile tea, 2-3 tablespoons of honey, and juice of one freshly squeezed lemon. Whisk vigorously for about 1-2 minutes until honey is fully dissolved.
  3. Fill serving glasses with ice cubes, about three-quarters full.
  4. Pour the chamomile tea mixture over the ice-filled glasses, filling each about three-quarters full.
  5. Top each glass with sparkling water, filling to the brim. Stir gently with a long spoon.
  6. Garnish each mocktail with a slice of fresh lemon and a few chamomile flowers. Serve immediately.
