For the Dressing
  • 1/4 cup Olive Oil Can substitute with avocado oil
  • 2 tablespoons Balsamic Vinegar Can substitute with red wine or apple cider vinegar
  • 1 tablespoon Honey Can substitute with maple syrup
  • 1 teaspoon Dijon Mustard Can substitute with whole grain mustard
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Wash the beets, trim the stems, and wrap each in foil.
  2. Roast the wrapped beets for 45 to 60 minutes until tender.
  3. Once cooled slightly, unwrap and peel the skins from the beets.
  4. Slice the oranges, removing both ends and peel, then segment.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  6. On a platter, arrange sliced beets, oranges, red onion, feta cheese, and walnuts.
  7. Drizzle the dressing over the salad and garnish with fresh herbs.
