  • 2 pounds Yukon Gold potatoes peeled and cut into chunks
  • 4 tablespoons Irish Butter quality Irish brands
  • 1 cup Whole Milk warm, or potato water as substitute
For the Greens
  • 4 cups Green Cabbage or Kale chopped
  • 4 scallions Spring Onions/Scallions sliced, optional
For the Flavor Boost
  • 1 cup Irish Cheddar Cheese optional
  • to taste Salt essential seasoning

Method
 

Preparation Steps
  1. Boil the potatoes in a pot of cold water until fork-tender, about 20 minutes.
  2. Sauté the chopped cabbage in melted Irish butter over medium heat for 4-5 minutes, then add sliced spring onions and sauté for another minute.
  3. Mash the boiled potatoes and mix in the sautéed cabbage, spring onions, and warm milk.
  4. Season with salt, transfer to a serving dish, and drizzle with melted Irish butter before serving.
