Steps
- Begin by chilling your serving glass in the freezer for about 10-15 minutes.
- In a cocktail shaker, muddle a handful of fresh raspberries with simple syrup until pulpy.
- Pour in the gin, freshly squeezed lemon juice, and egg white or aquafaba; do not add ice yet.
- Seal the cocktail shaker and shake vigorously for 15 seconds to emulsify the mixture.
- Add ice to the shaker and shake again for another 15-20 seconds until well chilled.
- Double strain the mixture into your chilled glass using a fine mesh strainer.
- Garnish with fresh raspberries or a twist of lemon peel, and optionally add bitters.
