  • 1 cup Ice Essential for chilling the drink.
  • 2 dashes Angostura Bitters Optional for added complexity.

Method
 

Steps
  1. Begin by chilling your serving glass in the freezer for about 10-15 minutes.
  2. In a cocktail shaker, muddle a handful of fresh raspberries with simple syrup until pulpy.
  3. Pour in the gin, freshly squeezed lemon juice, and egg white or aquafaba; do not add ice yet.
  4. Seal the cocktail shaker and shake vigorously for 15 seconds to emulsify the mixture.
  5. Add ice to the shaker and shake again for another 15-20 seconds until well chilled.
  6. Double strain the mixture into your chilled glass using a fine mesh strainer.
  7. Garnish with fresh raspberries or a twist of lemon peel, and optionally add bitters.
