Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add one egg and vanilla extract to the creamed mixture and beat until combined, 1-2 minutes.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix with the wet ingredients until just combined.
  5. Roll dough into balls (1½ tablespoons size) and flatten slightly. Place on prepared sheets with space between.
  6. Top each cookie with a pineapple ring and sprinkle sugar over each ring.
  7. Bake for 12-14 minutes until edges are golden; they should still be soft in the center.
  8. Cool on sheets for 5 minutes, then transfer to wire racks to cool completely.
