  2. In a blender or food processor, combine the prepared peaches, sugar, cold water, and lemon juice. Blend on high speed for about 2–3 minutes, or until the mixture is completely smooth and creamy.
  3. Pour the smooth peach mixture into a metal loaf pan or a freezer-safe container. Spread the mixture evenly, ensuring there are no air pockets.
  4. Place the container in the freezer and allow the mixture to freeze for at least 4 hours, or until firm.
  5. Before serving, remove it from the freezer and let it sit at room temperature for about 5 minutes.
