  • 1 cup Vegan Cheese nutritional yeast can be used as a substitute

  • 2 tablespoons Chili Powder adjust according to heat preference
  • 1 teaspoon Cumin adjust according to heat preference

  • 1 cup Bell Peppers diced
  • 2 cups Spinach

Step-by-Step Instructions
  1. In a large pot, heat a glug of olive oil over medium heat. Add diced onion and minced garlic, sautéing for about 5 minutes until translucent and fragrant.
  2. Introduce the vegan ground meat to the pot, stirring well, and cook for approximately 5-7 minutes until browned and heated through.
  3. Sprinkle in the chili powder and cumin, along with diced bell peppers. Cook for an additional 3-4 minutes until the bell peppers soften.
  4. Pour in the tomato sauce, vegetable broth, and pasta shells, stirring until well combined. Bring to a rolling boil, which should take about 4-5 minutes.
  5. Once boiling, reduce heat to medium-low, cover, and simmer for 10-12 minutes. Stir occasionally and check for doneness.
  6. Remove from heat and stir in vegan cheese until melted and creamy. Taste and adjust seasoning if needed.
