Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a heavy-bottomed pot over medium heat.
  2. Add 1 diced onion, 2 diced carrots, and 2 diced celery stalks. Sauté for 5-7 minutes until softened.
  3. Stir in 3 minced garlic cloves and continue sautéing for an additional minute until fragrant.
  4. Pour in 6 cups of chicken broth, 2 boneless chicken breasts, 2 bay leaves, 1 teaspoon of oregano, 1 teaspoon of thyme, and red pepper flakes.
  5. Cover partially and let it simmer for 25-30 minutes.
  6. Remove chicken, shred it with a fork, and return it to the pot.
  7. Add 1 cup of pasta and cook according to package instructions, about 8-10 minutes.
  8. Remove bay leaves and stir in the juice of one lemon and ¼ cup of chopped fresh parsley.
