  • 1 cup Oyster Crackers or panko breadcrumbs
  • 1 cup Sharp Cheddar Cheese or Gruyère for variation
  • 4 tablespoons Butter for greasing and mixing
  • 1 teaspoon Paprika optional for dusting

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and gather your tools.
  2. If using fresh corn, cut the kernels from the cobs for about 5 cups, saving the juices.
  3. Generously grease the casserole dish with butter.
  4. In a large bowl, whisk together eggs, half & half, salt, pepper, and nutmeg until smooth.
  5. Fold the corn into the wet mixture with ½ cup of cracker crumbs and 2 tablespoons of melted butter.
  6. Pour the corn mixture into the prepared dish, smoothing it out evenly.
  7. Sprinkle cheddar cheese evenly over the top of the corn pudding mixture.
  8. Combine remaining cracker crumbs with melted butter and sprinkle over the cheese.
  9. Dust the top with paprika for color.
  10. Bake for 45-50 minutes until puffed and golden brown.
