Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, mix together the dry ingredients: flour, granulated sugar, light brown sugar, baking soda, baking powder, salt, and spices.
  3. In another bowl, combine wet ingredients: vegetable oil, sour cream, eggs, and vanilla until smooth. Fold in grated carrots, then combine wet and dry mixtures until just combined.
  4. In a separate bowl, beat cream cheese with sugar and vanilla until creamy. Add eggs one at a time, mixing until fully incorporated.
  5. Spread half of the carrot cake batter into the baking dish. Spoon the cheesecake filling over it, then dollop the remaining carrot batter on top. Gently swirl two batters together.
  6. Bake for 35-40 minutes until a toothpick comes out clean. Let cool at room temperature for an hour, then chill in the fridge for at least 2 hours before serving.
