Step-by-Step Instructions
- Cream the Butter. Use a large mixing bowl and an electric mixer to cream 1 cup of softened butter until light and fluffy, about 3 minutes.
- Add Granulated Sugar. Mix in 1 ½ cups of granulated sugar with the creamed butter until fully combined, approximately 1 minute.
- Incorporate Flavor Elements. Add minced fresh mint, 1 teaspoon of vanilla extract, 1 teaspoon of mint extract, 1 large room temperature egg, and the zest of one lime to the mixture. Mix until well incorporated.
- Mix Dry Ingredients. In a separate bowl, whisk together 2 ½ cups of flour and 2 teaspoons of baking powder. Gradually add this dry mixture to the wet ingredients while mixing on low speed.
- Chill the Dough. Cover the dough with plastic wrap and refrigerate it for 30-45 minutes.
- Preheat the Oven. While the dough chills, preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Roll and Cut the Dough. After chilling, roll the dough out to a thickness of about ¼ inch and shape with cookie cutters.
- Bake the Cookies. Bake in the preheated oven for about 10 minutes or until edges are lightly golden. Let cool on baking sheets for a few minutes before transferring to a wire rack.
