  • 1 tablespoon Lime Zest use fresh lime
  • 2.5 cups All-Purpose Flour avoid overmixing
  • 2 teaspoons Baking Powder leavening agent

Equipment

  • Mixing Bowl
  • Electric mixer
  • whisk
  • Cookie cutters
  • Baking sheets
  • parchment paper
  • Plastic Wrap

Method

Step-by-Step Instructions
  1. Cream the Butter. Use a large mixing bowl and an electric mixer to cream 1 cup of softened butter until light and fluffy, about 3 minutes.
  2. Add Granulated Sugar. Mix in 1 ½ cups of granulated sugar with the creamed butter until fully combined, approximately 1 minute.
  3. Incorporate Flavor Elements. Add minced fresh mint, 1 teaspoon of vanilla extract, 1 teaspoon of mint extract, 1 large room temperature egg, and the zest of one lime to the mixture. Mix until well incorporated.
  4. Mix Dry Ingredients. In a separate bowl, whisk together 2 ½ cups of flour and 2 teaspoons of baking powder. Gradually add this dry mixture to the wet ingredients while mixing on low speed.
  5. Chill the Dough. Cover the dough with plastic wrap and refrigerate it for 30-45 minutes.
  6. Preheat the Oven. While the dough chills, preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  7. Roll and Cut the Dough. After chilling, roll the dough out to a thickness of about ¼ inch and shape with cookie cutters.
  8. Bake the Cookies. Bake in the preheated oven for about 10 minutes or until edges are lightly golden. Let cool on baking sheets for a few minutes before transferring to a wire rack.
