Ingredients
  

For the Chicken
  • 2 lbs boneless, skinless chicken breast cut into uniform cubes
For the Sauce
  • 2 tbsp olive oil or vegetable oil
  • 10.5 oz cream of chicken soup or cream of mushroom
  • 1 cup sour cream or Greek yogurt
  • 1 packet ranch seasoning mix 28g
For the Cheese & Toppings
  • 2 cups sharp cheddar cheese freshly shredded
  • 8 slices bacon or turkey bacon for a lighter version
  • 1/2 cup green onions sliced, or omit

Method
 

Directions
  1. In a large skillet, cook eight slices of bacon over medium heat for about 8-10 minutes until crispy. Remove and crumble.
  2. Season the chicken with salt and pepper. In the same skillet, heat olive oil and sear the chicken for about 4-5 minutes on each side until golden brown. Transfer to a ceramic dish.
  3. In a mixing bowl, combine cream of chicken soup, sour cream, and ranch seasoning mix. Whisk until smooth.
  4. Pour the sauce over the chicken in the ceramic dish and toss gently to coat.
  5. Preheat your oven to 375°F (190°C). Cover with cheddar cheese and bake for 20-25 minutes until the cheese is bubbling.
  6. Allow to cool for 5 minutes, then top with crumbled bacon and green onions before serving.
