Preparation Steps
  1. Preheat your oven to 325°F (160°C).
  2. In a large mixing bowl, combine softened cream cheese and sugar. Beat until smooth and creamy.
  3. Add vanilla extract and sour cream, mixing to combine thoroughly.
  4. Add eggs one at a time, mixing gently until blended.
  5. In a separate bowl, mix crushed graham crackers with melted butter.
  6. Line a cupcake pan with mini cupcake liners and distribute the crust mixture evenly.
  7. Pour the cheesecake filling into each lined cupcake holder, filling about three-quarters full.
  8. Bake for approximately 20 minutes, until set with a slight jiggle in the center.
  9. Allow cheesecakes to cool in the pan for about 10 minutes, then refrigerate for at least 2 hours.
  10. Before serving, sprinkle with festive sprinkles.
