Step-by-Step Instructions for Cheesy Potato Burritos
  1. Preheat oven to 425°F (220°C). Bake tater tots according to package instructions for 20-25 minutes until golden brown and crispy. Crush tater tots into bite-sized pieces.
  2. In a skillet over medium heat, add ground beef (or substitute). Cook for 5–7 minutes until browned. Season with salt and pepper, then drain excess grease.
  3. In a mixing bowl, combine the browned meat, crushed tater tots, cheddar cheese, and Monterey Jack cheese. Stir until well combined.
  4. Warm tortillas in a skillet for 30 seconds on each side or microwave for 15-20 seconds to make pliable.
  5. Place a tortilla flat, spoon in filling, drizzle with chipotle sauce, and add sour cream. Fold sides and roll tightly, seam-side down in a greased baking dish.
  6. Preheat oven to 375°F (190°C). Sprinkle cheese on top of assembled burritos and bake for 15-20 minutes until cheese is melted and bubbly.
