  • 1 tsp Kosher Salt Adjust to taste.
  • 1 tsp Black Pepper Adjust to taste.
For the Bowl
  • 1 cup Cucumbers Any salad cucumber variety.
  • 1/2 cup Kalamata Olives Pitted; can substitute with green olives.
  • 1/2 cup Tzatziki Sauce Store-bought or homemade.
  • 2 tbsp Fresh Dill Can substitute with parsley.
  • 1 medium Lemon Sliced for garnishing.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Prepare a baking sheet lined with parchment paper.
  2. In a large mixing bowl, combine the ground turkey, breadcrumbs (or almond flour), finely chopped onion, minced garlic, egg, kosher salt, and black pepper. Mix until well blended.
  3. Shape the turkey mixture into 1.5-inch meatballs and place them on the lined baking sheet.
  4. Bake the meatballs for 12-15 minutes, turning on the broiler for the last 2-3 minutes for a crispy exterior.
  5. Cook rice or pearl couscous according to package instructions, usually about 10-12 minutes.
  6. Chop cucumbers and prepare kalamata olives, ensuring they are pitted.
  7. Assemble your Mediterranean Bowl by layering rice or couscous, turkey meatballs, cucumbers, and olives.
  8. Drizzle with tzatziki sauce and garnish with fresh dill and lemon slices.
