- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes into 1-inch chunks, then toss with olive oil, salt, pepper, and spices. Spread evenly on a sheet pan.
- In a small bowl, whisk together maple syrup, salt, pepper, and any additional seasonings to create the glaze.
- Place chicken thighs on top of sweet potatoes, brush with maple glaze, and reserve some glaze for later basting.
- Bake for 35-40 minutes, flipping chicken halfway and basting with more glaze.
- Once done, let cool slightly, then garnish with fresh herbs before serving.
