  • 2 tablespoons Olive Oil Can substitute with coconut oil

  • 1 teaspoon Smoked Paprika or Rosemary Optional
For the Sweet Potatoes
  • 2 medium Sweet Potatoes Cubed
For the Maple Glaze
  • 1/2 cup Maple Syrup Use pure maple syrup
  • 2 tablespoons Fresh Herbs (Parsley or Thyme) Chopped, for garnish

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into 1-inch chunks, then toss with olive oil, salt, pepper, and spices. Spread evenly on a sheet pan.
  3. In a small bowl, whisk together maple syrup, salt, pepper, and any additional seasonings to create the glaze.
  4. Place chicken thighs on top of sweet potatoes, brush with maple glaze, and reserve some glaze for later basting.
  5. Bake for 35-40 minutes, flipping chicken halfway and basting with more glaze.
  6. Once done, let cool slightly, then garnish with fresh herbs before serving.
