For the Slaw
  • 2 Ripe Mangoes Diced
  • 2 cups Green Cabbage Shredded
  • 1 Carrot Grated
  • 1 Red Bell Pepper Sliced
  • 1 Red Onion Finely sliced
  • 1 handful Fresh Cilantro Chopped
For the Dressing
  • 2 Lime Juice Juice of 2 limes
  • 2 tablespoons Honey or Maple Syrup
  • 2 tablespoons Sesame Oil
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. Dice the ripe mangoes, shred the green cabbage, grate the carrot, slice the red bell pepper, and finely slice the red onion. In a large mixing bowl, combine all vegetables and cilantro.
  2. Whisk together lime juice, honey or maple syrup, and sesame oil in a separate bowl, adding salt and pepper to taste.
  3. Pour the dressing over the vegetables and toss gently until coated.
  4. Let it rest for 5 to 10 minutes to allow flavors to meld.
  5. Serve chilled or at room temperature as a side dish.
