Step-by-Step Instructions for Mango Chicken Curry
  1. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add the chopped medium onion and sauté for 3-4 minutes until the onion is translucent.
  2. Introduce the minced garlic cloves and grated ginger to the skillet, stirring for about 1 minute until fragrant.
  3. Stir in 2 tablespoons of curry powder, 1 teaspoon of ground turmeric, and 1 teaspoon of chili powder. Cook for another minute.
  4. Add the boneless, skinless chicken pieces and stir well. Allow them to brown on all sides for 5-6 minutes.
  5. Pour in 1 can of coconut milk and sprinkle salt. Stir to combine and let it simmer for 15 minutes.
  6. Gently fold in the diced ripe mango and cook for an additional 3-4 minutes.
