Preparation
- Preheat your oven to 300°F (150°C) and prepare the muffin tin with cooking spray.
- In a skillet, sauté diced bacon or turkey bacon until crispy.
- Blend cottage cheese, Gruyere cheese, cornstarch, and salt until smooth, then add whisked eggs and blend again.
- Distribute cooked bacon among muffin cups and pour egg mixture until ¾ full.
- Pour boiling water into the baking sheet surrounding the muffin tin.
- Bake for 30 minutes or until the tops are slightly puffed and firm.
- Remove from the oven and cool for 5 minutes before serving.
