Method
 

Step-by-Step Instructions
  1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Dice the potatoes into uniform chunks and toss with olive oil, salt, paprika, and any other seasonings.
  3. Spread the seasoned potatoes on the baking sheet and roast for 30-40 minutes, stirring halfway through.
  4. In a skillet, cook the ground beef over medium-high heat for 5-7 minutes until browned. Stir in taco seasoning.
  5. Prepare pico de gallo by mixing diced tomatoes, jalapeños, cilantro, lemon or lime juice, and salt.
  6. Mix mayonnaise, sriracha, and lemon or lime juice for the sriracha mayo in a small bowl.
  7. Assemble the bowls with crispy potatoes, taco meat, pico de gallo, and drizzle with sriracha mayo.
