Cake Preparation
- In a large mixing bowl, whisk together the caster sugar, vegetable oil, fresh orange juice, and orange extract until well combined. Then, gently sift in the cake flour, stirring until smooth.
- In a clean bowl, beat the egg whites with cream of tartar until stiff peaks form. Gradually add remaining caster sugar while mixing until glossy.
- Gently fold the meringue into the cake batter using a spatula, careful not to overmix. This ensures a light structure.
- Pour the batter into an ungreased chiffon tube pan and bake at 325°F (165°C) for about 35 minutes until a toothpick comes out clean.
- Invert pan immediately onto a cooling rack and let cool upside down for about 1 hour.
- Prepare the orange whipped cream by beating the double cream until soft peaks form, adding icing sugar gradually.
- Remove the cooled cake from the pan and, before serving, spread the orange whipped cream on top.
