  • 1/2 whole Lemon Zest and juice add brightness.
  • 1 handful Fresh Basil or Parsley Use whichever is available.
For Serving
  • 1/4 cup Parmesan Optional, can be left out for dairy-free.

Method
 

Step-by-Step Instructions
  1. Prep your ingredients by thawing and de-shelling the shrimp. Mince the garlic, zest the lemon, and chop the fresh basil or parsley.
  2. In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to package instructions, about 8-10 minutes. Drain and reserve a cup of pasta water.
  3. Heat a large skillet over medium-high heat and add olive oil. Once shimmering, add shrimp and cook for 1-2 minutes on each side until pink and opaque. Remove shrimp and keep warm.
  4. Lower heat to medium and add another tablespoon of oil. Sauté minced garlic for 2-3 minutes. Then, add spinach and cook until wilted, about 1-2 minutes.
  5. Add drained pasta, sautéed shrimp, lemon zest, and juice to the skillet. Pour in reserved pasta water gradually, tossing everything together for 2-3 minutes.
  6. Serve the dish hot, garnished with fresh herbs and optionally sprinkle with Parmesan cheese.
