  • 1 pound Shrimp peeled and deveined
  • 1 bunch Asparagus trimmed
  • 2 tablespoons Olive Oil for drizzling
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 cloves Garlic minced
  • 1 tablespoon Lemon Zest
  • 1 tablespoon Lemon Juice from half a lemon
  • 1 tablespoon Fresh Parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Prepare the asparagus by rinsing and trimming the ends.
  2. Drizzle olive oil over the asparagus and sprinkle with salt and pepper. Toss to coat evenly.
  3. Combine the shrimp with minced garlic, lemon zest, and lemon juice. Add salt and pepper, tossing to coat.
  4. Spoon the shrimp mixture onto one side of the baking sheet, with the asparagus on the other.
  5. Roast in the oven for 10-12 minutes until the shrimp are opaque and asparagus is tender.
  6. Remove from the oven, let rest for a couple of minutes, then drizzle with more lemon juice and garnish with parsley.
