- Preheat your oven to 400°F (200°C). Prepare the asparagus by rinsing and trimming the ends.
- Drizzle olive oil over the asparagus and sprinkle with salt and pepper. Toss to coat evenly.
- Combine the shrimp with minced garlic, lemon zest, and lemon juice. Add salt and pepper, tossing to coat.
- Spoon the shrimp mixture onto one side of the baking sheet, with the asparagus on the other.
- Roast in the oven for 10-12 minutes until the shrimp are opaque and asparagus is tender.
- Remove from the oven, let rest for a couple of minutes, then drizzle with more lemon juice and garnish with parsley.
