  1. Preheat your oven to 400°F (200°C). Trim and halve the Brussels sprouts, toss them in a bowl with olive oil, salt, and pepper, then spread on a baking sheet and roast for 20-25 minutes, turning halfway.
  2. Prepare the lemon garlic butter mixture by combining melted butter, olive oil, minced garlic, lemon juice, lemon zest, smoked paprika, and a pinch of salt and pepper in a small bowl.
  3. Sear the cod fillets in a hot skillet; pat dry, brush with the butter mixture, and cook for 2-3 minutes per side until golden and flaky.
  4. Assemble the bowls with a base of quinoa or rice, add roasted Brussels sprouts, and top with seared cod.
  5. Garnish with parsley and lemon zest, serve warm.
