  • 4 cups Shredded carrots Grated or julienned
  • 2 cloves Garlic Minced
  • 3 tablespoons Rice vinegar Can substitute with apple cider vinegar
  • 2 tablespoons Sugar Can replace with honey or maple syrup for healthier option
  • 2 tablespoons Sesame oil Toasted sesame oil preferred
  • 1 teaspoon Chili flakes Adjust to taste
  • 2 tablespoons Sesame seeds Toasted
Optional Additions
  • 2 tablespoons Green onions Chopped
  • 1/4 cup Cilantro Fresh, chopped
  • 1 cup Cucumber Julienned

Method
 

Preparation
  1. Peel and grate the carrots into a mixing bowl.
  2. In a separate bowl, whisk together rice vinegar, sugar, sesame oil, minced garlic, and chili flakes until the sugar dissolves.
  3. Pour the dressing over the grated carrots and toss gently to coat evenly.
  4. Taste and adjust seasoning if needed, adding more sugar or chili flakes as desired.
  5. Transfer the salad to a serving dish and sprinkle with toasted sesame seeds.
  6. Optional: Cover and chill for 30 minutes before serving to enhance flavor.
