Step-by-Step Instructions
  1. Start by placing the mozzarella cheese and cream cheese in a microwave-safe bowl. Heat in the microwave for about 30 seconds, then stir. Repeat until the cheeses are fully melted and combined into a smooth mixture.
  2. In the same bowl, add the eggs, almond flour, baking powder, and minced garlic to your melted cheese blend. Mix until you have a cohesive dough.
  3. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight.
  4. Divide the dough into 8 equal portions. Flatten each portion between two sheets of parchment paper into a round flatbread about ¼ inch thick.
  5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Place the flattened rounds onto the baking sheet and bake for 15 to 17 minutes, or until the edges are golden.
  7. Melt butter in a saucepan over medium heat, add minced garlic, and sauté for 1-2 minutes until fragrant.
  8. Remove baked flatbreads, brush them with garlic butter, sprinkle with Parmesan if desired, and return to the oven for 1 minute.
