Step-by-Step Instructions
- Start by placing the mozzarella cheese and cream cheese in a microwave-safe bowl. Heat in the microwave for about 30 seconds, then stir. Repeat until the cheeses are fully melted and combined into a smooth mixture.
- In the same bowl, add the eggs, almond flour, baking powder, and minced garlic to your melted cheese blend. Mix until you have a cohesive dough.
- Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight.
- Divide the dough into 8 equal portions. Flatten each portion between two sheets of parchment paper into a round flatbread about ¼ inch thick.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Place the flattened rounds onto the baking sheet and bake for 15 to 17 minutes, or until the edges are golden.
- Melt butter in a saucepan over medium heat, add minced garlic, and sauté for 1-2 minutes until fragrant.
- Remove baked flatbreads, brush them with garlic butter, sprinkle with Parmesan if desired, and return to the oven for 1 minute.

Notes
Chill the dough for the best results and use low-moisture cheese for optimal texture. Customize with herbs for additional flavor.
