Step-by-Step Instructions for Jalapeno Peach Chicken
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper.
  3. Heat olive oil in a large, oven-safe skillet over medium-high heat for about 2 minutes.
  4. Sear the chicken for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and keep warm under foil.
  6. Sauté diced jalapenos and peaches in the same skillet for 2-3 minutes.
  7. Whisk together honey, apple cider vinegar, water, and cornstarch until smooth.
  8. Pour the honey mixture over the sautéed jalapenos and peaches, and simmer for 2-3 minutes.
  9. Return the seared chicken to the skillet and spoon the sauce over it.
  10. Bake in the preheated oven for 20-25 minutes until chicken reaches 165°F (74°C).
  11. Let the dish rest for a few minutes before serving warm drizzled with glaze.
