Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) to ensure even cooking.
  2. Season both sides of the chicken breasts with salt and black pepper.
  3. Heat a tablespoon of olive oil in a skillet over medium-high heat and sear the chicken for 3-4 minutes on each side until golden-brown.
  4. Remove the chicken from the skillet and set it aside on a plate.
  5. Add diced jalapeños and peaches to the same skillet and cook for about 2-3 minutes until softened.
  6. Whisk together honey, apple cider vinegar, water, and cornstarch in a bowl, then add to the skillet with the jalapeños and peaches, stirring until it thickens.
  7. Return the chicken to the skillet and coat it with the sauce.
  8. Bake the skillet in the preheated oven for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  9. Let the chicken rest for a few minutes before serving it warm with the glaze.
