Baking Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by greasing it or lining with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
- In a large bowl, beat together the eggs, granulated sugar, and brown sugar until light and fluffy. Stir in vegetable oil and vanilla extract.
- Fold in sour cream and grated zucchini until just combined.
- Gradually add dry ingredients to wet mixture, stirring gently until just combined.
- Fold in semi-sweet chocolate chips, saving some for topping.
- Pour batter into the prepared loaf pan, smoothing the top and adding reserved chocolate chips on top.
- Bake for 55-65 minutes until a toothpick comes out with a few moist crumbs.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
