Ingredients
  

For the Marinade
  • 1/4 cup low sodium soy sauce
  • 1/4 cup brown sugar can use light or dark
  • 1/4 cup sesame oil
  • 1/4 cup rice vinegar
  • 2 tablespoons gochujang
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon minced garlic
For the Chicken Skewers
  • 1 pound boneless, skinless chicken thighs cut into 1 ½" cubes
  • 1/4 cup chopped green onions optional garnish

Method
 

Preparation
  1. Start by cutting the boneless, skinless chicken thighs into 1 ½" cubes. Place these tender pieces in a mixing bowl.
  2. In a separate bowl, whisk together the marinade ingredients until well combined. Set aside a portion for basting later.
  3. Pour half of the prepared marinade over the chicken cubes, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 4 hours or overnight.
  4. When ready to grill, preheat your grill to medium heat at about 350°F (175°C) and prepare the skewers.
  5. Thread the marinated chicken pieces onto soaked skewers, leaving space between each piece for even cooking.
  6. Grill the skewers for 20-30 minutes, turning every 3-4 minutes until charred and cooked through.
  7. Baste with reserved marinade during the last few minutes of grilling to enhance flavor.
  8. Remove from the grill and let them rest for a few minutes before serving with optional garnishes.
