Method

Step-by-Step Instructions for Cheesy Irish Potato Bites
  1. Begin by peeling and thinly slicing 2.5 pounds of potatoes into 1/8-inch rounds, using a mandoline for uniformity.
  2. In a separate mixing bowl, whisk together 4 tablespoons of melted butter, 1/2 cup of cream, 3/4 tsp of salt, 1/4 tsp of pepper, and 2 minced garlic cloves.
  3. Preheat your oven to 375°F (190°C). Grease a muffin tin well to prevent sticking and begin layering 5 potato slices in each muffin cup.
  4. Once the muffin tin is filled, cover it tightly with aluminum foil and bake for 25 minutes.
  5. After steaming, carefully remove the foil and continue baking for an additional 20 minutes, or until the tops are golden brown.
  6. Once baked, remove the muffin tin from the oven and let it cool for 5 minutes, then garnish with minced chives.
