- In the same skillet, melt butter. Add minced garlic and sauté for 1-2 minutes. Pour in chicken broth and heavy cream, bring to a simmer.
- Gradually whisk in mozzarella and Parmesan cheese until melted. Add cheddar cheese if desired. Stir to combine.
- Slice the chicken and return to the skillet. Add the cooked rotini and toss to combine. Simmer for 2-3 minutes.
- Garnish with fresh parsley and serve immediately.
