  • 1 cup Heavy cream Can use light cream
  • 1 cup Chicken broth Can substitute with vegetable broth
For the Cheesy Goodness
  • 1 cup Mozzarella cheese Shredded
  • 1/2 cup Parmesan cheese Grated
  • 1/2 cup Cheddar cheese Optional, shredded
For the Garnish
  • 2 tablespoons Fresh parsley Chopped

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Cook the rotini pasta for 8-10 minutes until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with Cajun seasoning, salt, and pepper. Cook for 6-7 minutes until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, melt butter. Add minced garlic and sauté for 1-2 minutes. Pour in chicken broth and heavy cream, bring to a simmer.
  4. Gradually whisk in mozzarella and Parmesan cheese until melted. Add cheddar cheese if desired. Stir to combine.
  5. Slice the chicken and return to the skillet. Add the cooked rotini and toss to combine. Simmer for 2-3 minutes.
  6. Garnish with fresh parsley and serve immediately.
