Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat together the eggs and sugar until pale and fluffy, about 5 minutes.
  3. Sift in the flour, baking powder, and salt, folding gently until just combined.
  4. Spread the batter on the prepared baking sheet and bake for 12–15 minutes.
  5. Remove from the oven and roll the sponge in a towel dusted with powdered sugar. Cool for 30 minutes.
  6. Melt the white chocolate and mix with mascarpone and whipped cream until smooth.
  7. Unroll the sponge and spread the filling. Drizzle with raspberry sauce, then roll up again.
  8. Wrap in plastic wrap and refrigerate for at least 1 hour to set.
  9. Dust with powdered sugar and garnish with berries before serving.
